[Food] Salmon flakes creamy sweet potatoes soup


Made something impromptu that day with whatever I have at home and came up with this special recipe. Never thought salmon can be best friend with sweet potatoes. Wish to share this recipe here.

Ingredients:
Salmon flakes, 4-6 sweet potatoes, celery, curry powder, soup stock (can be chicken/mushroom/fish according to your preference) Milk.

First, remove skin of sweet potatoes, boiled them in hot water till soft. Make 2 cups of soup stock of your preference, pour it into blender and add the sweet potatoes in. Add another half or a cup of milk and blend it till smooth. Pour the smoothly blended sweet potatoes into the wok, add in curry powder, and salt for taste. Mix it thoroughly.
On frying pan, pour in some oil or butter, and add in the cut celery, then the salmon flakes. Add some pepper and salt for taste. Stir fried for 3 minutes.
Scope the soup and lay the stir fried salmon flakes on soup...

Voila...Enjoy...

Vanilla

Vanilla

Bought some vanilla pods from spice garden, the sweet aroma of it is fascinating. It is said to be the third most expensive spices in the world. Still thinking on where to use it on, coffee perhaps?? I think, most probably on coffee. I saw an article on the internet saying that after using all the vanilla seeds, you may dried the pod and put it into your sugar jar, so that you will have this sweet aroma to your sugar. Interesting isn't it. I can't wait to try but am recently tied up pretty badly to my work. Struggling hard to keep my focus on track and let everything on schedule. Other than my main task, there are still some other task waiting for me to do an update and etc. I am working slower than i used to be.....Maybe because i turned older.

I can now feel the stress up to my throat. Argh........

[Food] New England Clam Chowder

The potatoes puree, or the blended potatoes. You may added a carrot into it too.

Voila, the smoking hot New England Clam Chowder is ready. With my own planted coriander for the refreshing taste.

Created my own modified version of New England Clam Chowder.
It's inspired by what Victoria Station served, my favorite soup, the New England Clam Chowder.
I hereby included my own recipe, which is simple and everyone can do it.

Recipe: New England Clam Chowder
Ingredient: 3 Large US potatoes, 2 Holland Potatoes, 1 can of Clam in Soy Sauce( available in Jusco), half cup of fresh milk, Chicken Stock, 2 Large yellow onions, Butter, 2-3 Carrots, some cream cheese or thick cream if you have.

1. Stir fried the sliced yellow onions with butter and a pinch of salt until it turned soft and brown.
2. Cut the potatoes into cube, and the carrot into the bite size. Cook in boiled water until soft. Let it cool and blend only the US potatoes in blender to get the smootie smooth potatoes puree.
3. Add the Holland potatoes cube to the yellow onions.
4. Add half cup of water.
5. Add in the clam without the soy sauce.
6. Add in the US potatoes puree and cook for a 3 minutes.
7. Add in 4 bowls of water, the chicken stock for soup and the soy sauce from the clam.
8. Wait till it boil, add in some cheese or thick cream for creamier taste and then pour in the milk.
9. Voila, that's it. the clam chowder is ready to be served.
If you are a fans of bread you may add in some bread crouton ( can be prepared by toasting bread on frying pan, best cut into bite size before toasting it.)

The creamy soup together with bread crouton, life just can't be anymore better. Like i said, coup is a soul comforter.

Celery soup with dang gui and wolf berries

Sharing my own simple do-it-at-home recipe.

Recipe 1: Healthy- meatless comforting soup.
Celery(4 long celery stalk) , "dang gui", wolf berries and some soup stock(may be chicken stock)
Immersed 3-4 dang gui slices and handful of wolf berries in water. Cut the celery stalk into 7-10cm length. Boil 5 cups of water in the pot then put in the soup stalk. I prefer the Konbu Dashi soup stock. Then just add in the celery stalk, wolf berries and the dang gui slices. High heat for 5-10 minutes and then turn into medium heat for another 5 minutes. Voila....The very comforting soup that is absolutely healthy. You many remove the dang gui slices if you feel the taste is strong enough as they tend to show bitterness if you cook them too long. Salt may be added if you want saltier taste.

Preparation time:10 minutes
Cooking time: 15-20 minutes
Serving size: 3-4

P/S: This soup will bring you energy and comfort. Best to have it when you are stressful and tire.

Recipe 2: Potato salad with Feta cheese
Ingredient: 3-4 potatoes, Feta cheese, salt, coarsely grinned black pepper and mayonnaise
First, remove the skin of potatoes, cut it into bite size cube, then cook it in boiled water until it turned tender. Then remove the water. Allow the potatoes to be cooled in room temperature or in the fridge. Taste the feta cheese, if you feel it is too salty for your taste, immersed it into a mixture of water to milk in ratio 1:1 for 30 minutes to 1 hour. Crumbled the feta cheese and mix it with the potatoes, sprinkle pinch of salt according to your taste. Then add 6 table spoon of mayonnaise and mix them well.( you may even add 1 soft boiled egg, crumbled it and added it to the potatoes, taste really different although mayonnaise is a lighter version of substitution, i like them both together) Lastly, sprinkle some coarsely grinned black pepper to give you the exotic flavor. I usually add a lot of black pepper.... ^^. Voila. The feta cheese potato salad is best served chilled. If you cannot finish it, just keep it refrigerated and it can last for 2 days.

Cooking time :15 minutes
Serving size: 3-4

莧菜煎饼

5分钟的准备时间, 只要材料都有就可以动手准备了。1粒鸡蛋,面粉1-2汤匙,莧菜,一点盐和胡椒粉调味。把莧菜剁碎,加到鸡蛋和面粉里, 加点水, 适量的盐和胡椒粉作为调味,搅拌均匀。少量的油在平底锅里热一热, 先把一面莧菜煎饼煎到7成熟,再翻到另外一面。
就这样简单, 当然可以另外加你喜爱的食才,如虾米等。
自己亲手做的, 卖相还可以吧?至于味道呢?是我喜欢的味道, 况且口味是因人而异的。
纯粹好玩和想要找些不一样的东西来让自己暂时的逃离痛苦。这时今天动手做煎饼的原因。

My quick lunch that provides me with instant fullness and protein. Preparation time: 5 minutes.
[creamy hot coffee+ bull-eye style fried egg + a triangle of cheese]

Americans have their favorite baked beans on toast, i have fava beans on light toast.
Preparation time: 5-8 minutes

This is how the fava beans look like in can. Ingredients: Premium Fava beans, water, salt, sunflower oil, lemon juice and natural spices. Open it up and heat in pan, voila, ready to be served with bread or toast.

Home-made breakfast, cheers up your morning and makes up your day. Pic: Scramble eggs top with sprinkle of salts and black peppers, piece of whole meal bread, lightly toasted with a cup of creamy hot coffee served in my bohemian style mug.

Breakfast is an important meal of our day. I always take it seriously and for me, it's a habit now.
I willing to spent more time on preparing breakfast rather than dinner.

[Food]Cappuccino-The Making

This article is specially dedicated to a friend that requested it-JF.

2 main gadget that you need to prepare a cappuccino. The one on the left is French Coffee Press, price range is between RM50-RM100 for the size of 4C. 4C is the size to serve for 1-2 persons. On the right is the gadget that i used to make milk froth. It's from IKEA, cost me around RM10, it's indeed another reason why i love IKEA so much.

Actually, to made the milk froth, even bu using the French Coffee Press is already enough. The only problem is that will be a bit messy and not so effective.


With these 2 smart gadget, the ingredients that you need to make a quality home-made cappuccino will be the coffee ground, milk, sugar for flavors.

First, boil some water. Rinse your coffee cup and the French Coffee Press with the hot water. Then, scope 2 large spoon of ground coffee into your French Coffee Press, pour in the hot water until 2/3 full. Cover it with the press but leave it there without pressing down the presser. Let it settle for 10-15 minutes then only press the presser down. Settling time varies depend on how strong you want your coffee to be.

In the mean time, warm some milk. You may warm it by heating it with frying pan, or just pour some milk into a cup and microwaved it for 40 seconds max. Do not boil it. Fresh milk is recommended to be used here.

Then, you may use the cappuccino milk froth maker and start to froth the milk. The best way is to tilt you cup a little and move the froth maker from the bottom of the cup to the top. 15-20 seconds will already do the magic. Then, gently hit the bottom of your cup that filled with the milk forth to your counter top to break all the big bubbles that on the surface of the milk froth.

Next, it's time to pour out your freshly pressed coffee into a warm coffee cup, scope the milk froth or you may just pour it gently into your coffee. Voila!!!


For extra flavors, you may use a dried Cinnamon stick as the coffee stirrer, it will give you something unexpectedly soothing. Sugar may be added to the freshly pressed coffee if you are not a fans of sugarless coffee.

[Food]Cappuccino


Manage to create a cup of good cappuccino this evening. I even had Cinnamon Stick to add in more exotic flavor to my coffee. The milk froth on top of it was created by using simple "machine" that i got from IKEA not long ago. The milk froth tasted great, smooth and almost creamy. I am so addicted to it, since last week, i had been having my coffee in homemade cappuccino way everyday whenever i made a cup of coffee.

P/S: Su Hui, can't wait to let you try this.....I made it into half the caffeine content so i think you will still be able to sleep after drinking this..... :)

P/S 2 : Jing Fen, i remember i still owing you a cup of cappuccino that i said i will specially make it for you when you come by my place....Still owing you.... :)

[Food]Homemade Potato Salad

Tried out a simple recipe of potato salad, with a tiny modification from the recipe that i got from the internet. I used my leftover potatoes and a carrot. Pretty simple actually but the taste came out great. Cut the potato and carrot into small pieces or cubes, then boiled it until soft. Next, smash it and make the cooked potato and carrot into a paste. Cut a boiled egg into cubes and mix it. Add in a pinch of salt and some pepper for seasoning. Mix the paste with some premium quality mayonnaise(I personally prefer the TopValue Mayonnaise from Japan). Voila!!! Chilled in fridge, and serve with some butterhead. I had even added in a cube of laughing cow cream cheese and had some seaweed sringkled on it. My homemade Potato Salad looks great huh??

Strange Food-Small story in Wang Fu Jing

Went to "Wang Fu Jing" tonight. Among all those local famous food stalls at the road side, i saw people selling this- the Starfish, or i would like to call it as "Patrick" as in Spongebob. They are actually eating it. So, i bought it and took this picture. Later i did taste it back at my place. The outer skin is not edible, i can only taste the infill. Tasted nothing special.... but the texture and the touch of it feel so good.

This is the pic taken at a coffee house at the ground floor of the apartment that i am living in beijing. Here is the nearest place that I can get wireless connection. The food that I ordered was huge in size and after eating it still have this much left. The price is high as well, a noodles costs me RMB 28, which is 14 riggit.

Kopi Luwak

Watched a TV program about coffee just now. Came across this Kopi Luwak, that i only knew so little about it. Before watching this program, what i only know about this coffee was it was produced in Indonesia.

After watching this program, it makes know a little more about this world most expensive coffee. It was light brown in colour after the luwak "processed" in the digestive tract. Well, these light brown colour coffee ground were sticked together and sort of shape like a cylinder. The ground will then be dry naturally until the water level in the coffee ground is as low as 14%. Then, it was sent to further process.

What makes this so interesting was the way it was "processed" by the luwak, and due to this, the supplies are limited. Estimated 450kg at most make it into the world market each year. I wonder would i have the chance to enjoy it one day? Maybe i will have to travel to US of Japan to taste it because it was mainly served there.

Who knows right?
